Kiran Selvarajan has joined the team at The Folio Bar & Kitchen, bringing nearly 28 years of experience manning the stoves in five-star deluxe hotels around the world. He’ll be overseeing a pivot to a more gourmet offering for The Fellows House hotel, presenting a menu of nutritious modern British fare with a strong vegetarian and vegan presence. Expect dishes such as seared tofu steak, chermoula squash, plant wellington and tofish and chips, alongside classic bistro favourites. “The last five years has seen a rapid movement towards veganism and plant-based food with a conscious attitude of ‘healthy food equalling healthy minds’,” explains Kiran. “My background has influenced the new food concept at The Folio Bar & Kitchen with a play on traditional British classics like fish and chips, but the batter ingredients include Noori and the chicken burger features a variety of Korean spices. We want to ensure the menu caters to everyone’s palates as our guests travel from all over.” NEW CHEF AT THE FOLIO BAR & KITCHEN
