MORGAN’S BUTCHERY IS NAMED AS A NATIONAL FAVOURITE Morgan’s Butchery in Baythorne Hall has been named as one of the Nation’s Favourite Businesses by the Small Business Saturday campaign as the latter kicks off its annual call to champion and support the country’s favourite small businesses. The award-winning, family-run shop, which promotes British farming, traditional butchery and accessibility, will be showcased as part of the official countdown to Small Business Saturday on 5 December. “We’re only a small family business in the countryside, so to be recognised nationally alongside so many brilliant independent businesses is something we never imagined,” said master butcher Miles Nicholas. “Everything we’ve achieved has been made possible by the customers, farmers, producers and wider community who continue to support us. Hilton Cambridge City Centre is pleased to announce the appointment of Mirko Spalvieri as head chef. Having joined the hotel on 13 July, he brings 15 years of culinary experience gained across restaurants in Italy and the UK. Joining at a crucial time as the team plans a hotel renovation for next year and looks to reposition and relaunch its food and drink outlets from summer 2027, Mirko will be leading the hotel’s kitchen team and overseeing its food operations and menu development, including daily dining and bespoke menus for conferences and events. He plans to develop seasonal specials, monthly themed supper clubs and customised menus for conferences and events, taking the opportunity to work with UK-based and local suppliers. “Joining Hilton Cambridge City Centre marks an important new chapter in my career,” said Mirko. “I have always wanted to work in the hotel industry, and I have been impressed by the strength of the kitchen team and the way colleagues Hilton welcomes new head chef
