Aged tuna INGREDIENTS • 100g Fin Boys aged tuna • Furikake (available at Fin Boys) • 500ml soy • 500ml dashi

STEP-BY-STEP GUIDE 1. Set aside the aged tuna and furikake, add all the other ingredients to a large pan and boil. 2. Turn down the heat and reduce the sauce to a syrupy consistency – takes about two to three hours. 3. Once the consistency is correct, paint the sauce over the tuna, add a sprinkle of furikake and serve.

• 1 piece of kombu • 200g brown sugar • 250ml mirin • 200g smoked eel bones
