Smoke & Sour

For my twist on a classic, I like Swedish-based Gnista, which has created two complex and flavourful spirits. We’ll be using their Floral Wormwood this time, but I highly recommend checking out their Barreled Oak, too. Sours are traditionally made with whisky, lemon juice, sugar and egg white – an ingredient that tames the tart flavour and creates a really rich, smooth texture. I’m using aquafaba (chickpea water) to make it vegan, and still bring a silky element to the drink. You’re more than welcome to use the egg white if you want the extra protein! INGREDIENTS •70ml Gnista Floral Wormwood • 35ml lemon juice (approx 1 lemon) • 25ml smoked sugar syrup (100ml water, 100g caster sugar, 3g Lapsang tea) • 15ml aquafaba/1 egg white • Ice • 1 dehydrated lime for garnish syrup by combining 100ml water and 100g caster sugar. Bring to the boil until the sugar has dissolved. Add 3g Lapsang tea and steep for five minutes, before straining. 2. Use a sieve to drain the STEP-BY-STEP GUIDE 1. Create your smoked sugar aquafaba from the chickpeas, then mix 15ml with the Gnista, lemon juice and smoked sugar syrup in a cocktail shaker. Shake vigorously for 30 seconds with a handful of ice. Strain into a tumbler and garnish with the slice of dehydrated lime.
