MEET THE CHEF GREAT FOOD

WITH PROVENANCE Since opening in 2018, Provenance Brix + Mortar has established itself as a true in-the-know gem. With world-beating Sunday roasts, delicious flame-cooked meat, fish and veg dishes and exquisite desserts – not to mention one of the best outdoor seating areas in the county – it’s had foodies flocking to Whittlesford for a taste. A new chapter begins, as the venue welcomes head chef Joshua Fulcher, who honed his skills at favourites like Restaurant 22 and Tabanco. “Food is an event, a celebration. It brings people together. It’s more than just nourishment or a necessity!” enthuses Joshua. “I want my passion for conviviality to resonate, and would love to further establish Provenance’s reputation by becoming a spot people know and love, a place they can return to time and again. Somewhere people get excited to visit, as they know they’ll get a warm reception and a lovely bit of food.” Josh plans to continue a focus on cooking over fire with quality ingredients. “The hearth is the body and soul of the engine room – a bit of kit at the core of everything we do here at Provenance and a unique cooking method which will shape my menu planning,” he explains. “Otherwise, seasonality will lead the way, allowing the restaurant to be produce-led with whatever is available at the time. The focus will be on flavour and allowing ingredients to speak for themselves.” Pay a visit to see what’s new!

Cafe Au Chocolat Bonjour to Cafe Au Chocolat, a cosy new eatery bringing a little taste of France to Green Street. Serving high-class coffee, freshly made crêpes, cakes and other treats, it’s run by Krystyna Szypryt, who takes inspiration from the flavours and discoveries of her well-travelled life. It’s the second branch of Cafe Au Chocolat, which also has a thriving outpost in Stamford, Lincolnshire, and Krystyna is excited to bring something fresh to the Cambridge food scene. “Our goal is to be the cafe with a difference,” she explains, “offering a top-quality experience in a relaxed atmosphere, with a unique selection of savoury and sweet pancakes in an authentic French ambience – or to take out.” In addition to French-style crêpes, you can expect own-label coffee beans, luxurious hot chocolates and a tempting patisserie, plus cheese and wine.
