Shrove Tuesday falls on 4 March this year, marked by celebration and feasting ahead of Lenten abstinence. The French call it Mardi Gras, which sounds like a lot more fun. For first-timers, the batter recipe includes 100g of plain flour, two large eggs, 300ml milk, 1 tbsp sunflower or vegetable oil and a pinch of salt. Whisk it all together in a bowl or jug until smooth. Place a non-stick frying pan on the stove over a medium heat and add the cooking oil. Once hot, pour in a neat circle of batter and cook for a minute, loosening the edges before flipping the pancake with confidence so both sides are crisp and golden. Serve with lemon and honey.
