“Eddington is almost as eco as you could get,” says Gayle. A definite up-and-coming destination in Cambridge, this hotel marks the first of Eddington’s steps toward an exciting future. Sharing facilities with Turing Locke, bespoke restaurant KOTA and bar Dutch belong to the hotel. “KOTA was the brainchild of Matt, who owns NOVI,” says Gayle. “He wanted a Finnish concept, where they cook over coals – so it’s a bit different.” The focus is to create a warm and inviting experience for the local community and hotel guests, KOTA’s key offer being brunch, wood-fired food, speciality coffee, cocktails and craft beer. Forward-thinking design is at the fore of Hyatt’s philosophy. Joining AvroKO, Stirling Prize-winning architect dRMM is behind the pared-back, yet striking architecture. It’s a big appeal for younger generations, says Gayle: “They’re wowed by the property, and love the industrial look of it. It’s so Instagrammable. Sometimes I sit in the lobby and watch people taking selfies all day.”

With interiors designed by acclaimed studio AvroKO, this high-end hotel mixes opulent mustard tones with soothing blues, offset by walnut wood and Art Deco flair. Though Hyatt is the height of sophistication, it avoids the overbearing splendour of other local spots. At its core, Hyatt has a pioneering ethos. “Sustainability is massive for us,” explains sales director Gayle Martin. “Our roof space is 80% made up of solar panels. We have a district heating system, and water that we plug in as part of the Eddington project – all this is recycled and goes out to a reservoir.” It is the Eddington community’s aspiration for complete sustainability that first drew Hyatt to the location.

On Cambridge’s doorstep, the hotel offers breathing space that city-centre accommodation can only dream of.
