Houghton Mill, the last working watermill on the River Great Ouse, will now be producing flour from wheat grown on the Wimpole Estate. The two National Trust properties are located just 19 miles from each other. “Each year, we produce more than 200 tonnes of grain, and we’re thrilled to give people the option to buy flour grown and milled locally,” says David Hassall, farm manager at Wimpole Home Farm. “Our partnership with Houghton Mill supports the local community and helps reduce food miles, significantly lowering carbon emissions and contributing to a more sustainable future.” The milling process uses a traditional water wheel to produce stoneground flour and, when river levels aren’t suitable for the water wheel to operate, a set of hydroelectrically powered millstones enables it to keep going. Thanks to a team of volunteer millers, visitors to Houghton Mill can watch, hear and smell the flour being milled on Sundays until 3 November (weather dependent) and even have the chance to take some home with them. Bags of Houghton Mill’s flour are available all year round from the Houghton Mill tea room, as well as National Trust gift shops at Anglesey Abbey and Wicken Fen. Throughout the festive season, Japanese restaurant Kibou is offering special festive sharing menus alongside its signature dishes and seasonal chef’s specials.
