SAFFRON WALDEN IS READY TO WAFFLE Bicicletta has rebranded in the hands of Ana and Tori: say hello to Waffle+Coffee

Cambridge Edition: Tell us about the business and your rebrand. Ana & Tori (aka The Waffle Women): Having always had a passion for food and hosting, our Waffle+Co food truck business naturally expanded into ideas of fixed premises. We began as an events company (Women Who Waffle events), moved into the street food business – buying and converting a horsebox for our vintage look and then buying a second food truck from which we could serve hundreds of waffles on a service. The design elements of the cafe are very special to us since they were designed by Ana’s husband, then built by him and his father. There are various waffle-inspired elements to the cafe, from the illuminated pink plus sign at the till to the copper waffle-wall effect with our neon sign: ‘Walden Are You Ready to Waffle’. We have also brought over a nod from Waffle+Co to Waffle+Coffee; you can find our black-and- white tiles on our food trucks on the floor of the cafe. We’ve made bespoke banquet seating and worked with a local upholsterer for comfy seating in our large windows too. We’re a space for everyone, so we have fun colouring bits and bobs for children – a lady called Sunshine Jo even created a brilliant waffle truck design for colouring in. TWW: The menu is waffle-inspired, but we have a small non-waffle menu too! Our most popular choices so far are The Canadian Waffle, The Croque Monsieur Waffle, The Garden Breakfast Waffle, The Full English Waffle, The Avocado Smash Waffle and The Chocoholic. All our waffle CE: What should we expect from the menu?

batter is fresh, homemade and contains zero sugar, so they’re great for savoury options. For something sweet, we also serve our croiffle (croissant cooked in a waffle machine) with pistachio cremeux, biscoff crumb and raspberry crumb, or the chocolate hazelnut ganache with crushed toasted hazelnuts. We use local suppliers for many of our dishes – such as Burtons Butchers and coffee from Ninth Coffee Roasters – both of which are based in Saffron Walden. It’s fabulous to have our coffee roasted so close to the cafe and we’re proud to be the only cafe in Saffron Walden serving Ninth coffee. TWW: We’ve been overwhelmed by the support since opening Waffle+Coffee. After two amazing weekends, people have been queuing outside for tables and waiting for their new waffle and coffee fix of Saffron Walden. We are both from Saffron Walden and having started our other business here, we have had such messages of support and congratulations, which has been lovely. CE: How have things been going for you since opening? People are coming to visit from Cambridge, London and Bishop’s Stortford too. We’ve loved welcoming in both existing customers and new customers; everybody is welcome here. And yes, we still have the bike racks for the cyclists, bike locks, a pump and a new filtered water box for refilling. Our awesome, new menu will be the perfect refuel for any passing cyclist.
